Malic Acid

Malic Acid is a commonly used food additive and preservative, contributing a pleasantly sour flavour. It occurs naturally in all fruits and many vegetables, but is primarily associated with apples, deriving its name from the Latin word for apple. It is often used in place of citric acid, and has a stronger sour taste, requiring smaller quantities. It is also used as a component in artificial vinegar flavours.
